In my experience, you cannot record different virtual desktops in the same
manner that you can a second or third monitor.
I am selling two HDMI Monitors, but I can let you borrow one (or both) if
it means creating a better learning experience for you.

I use OBS (https://obsproject.com/) for the very use case you need. It works
best on a 2 monitor set up where I put the webinar on one screen and set OBS to
record that screen. But there are many other ways to use OBS.
