maybe something with x11.

With nouveau, Ubuntu will default to Wayland. And if you install the
Nvidia proprietary driver then that generally disables Wayland and
forces you to use Xorg. Although the difference is usually invisible to
the user.
So actually it sounds like Xorg was causing your problems...
This is a feature. Base images are not for building desktops or
something. They are intended for chroots, containers, or embedded
