Press alt+N while composing the mail and see if you get the options?

In outlook express, there will be a combo box in the new mail composition 
dialog box. if you press shift tab once when you are in the "To" edit box, 
you will get the "from" combo box containing all the mail accounts you have 
configured with outlook express. I think it is similar in Microsoft outlook 
also. give it a try and get back.
