I like to clean things up personally. You *shouldn't* have 
an issue building a new machine and resetting the password on the object and 
joining but it is such a small simple thing that it is worth it to me. I have 
seen too many things that shouldn't be an issue become a huge issue.

Just out of curiousity, why do you need to remove the 
computer account?  Wouldn't it just be easier to bring up a new ADC machine 
and have it take over with a new computer name?  
 
Deleting the computer account is fine, but is it necessary 
in your test lab?

You will need to delete the computer object with ADUC 
(DSA.MSC) and the server object in sites and services with DSSITE.MSC, removing 
one will not impact the other. Alternatively you can use adsiedit to remove both 
or use a script.

migration from Exchange 5.5 to Exchange 2k.  I had a machine setup with the 
ADC to move the 5.5 information into the directory.  I came in the morning 
and the HD was dead on my ADC machine.Now the machine is dead but the 
computer account is still in the domain.The server also still shows up under 
Sites and Services.  If I remove the computer account from the domain will 
that also remove is under Sites and Services?  Is there anything else I 
need to do before I remove that machine

You need to perform a metadata cleanup to remove a failed DC from Active Directory
