I think you want to separate the alerting and camera functionality. Have
the camera output a H.264 RTSP stream to some sort of video monitoring
system (Zoneminder, etc) which can do alerts. Don't rely on built in camera
SMTP functionality to alert on anything.

For a camera, check out the Reolink RLC-420 (search for it on youtube to
see some examples). Sold on Amazon. They're weatherproof, 2560x1440
resolution, great night vision, 802.3af powered and cost $79 a piece. It's
not the same category as a $400 camera, but you can put four of them
looking at different places for the cost of one expensive camera. It is
nice to have a single model that can be used for indoor or outdoor
mounting.

Any Dahua Starlight camera will have extreamly good night performance over
anything else. I have been putting these up, they are PTZ but cost is same
for a fixed non PTZ starlight so mise as well get the PTZ
