Describing it as no default document is a relict from the times when there was no such thing as an empty frame. Maybe the help text should be changed to reflect that. Somthing like start without an initial windows. Look at your task-manager, you should be able to see the soffice.exe/.bin process pair. To start the application with an empty frame, start soffice.exe without any parameters at all.
