This is simple, either select the graphic styles in the stylist (Styles and Formatting floater ) and use new from the context menu. Or create a new text shape (do not use a title or outline shape from one of the presentation layouts, use the text tool with the T icon ). Put some text in it, press esc. and then format as you like it using the toolbars. Open up the stylist with F11 if it is not yet open, the 'Default' graphic style should be selected. Use the New Style from Selection button at the top right of the stylist. Apparently OpenOffice calls those presentation styles. I assume you were talking about graphics styles, wg. Since this seems to be a known limitation (according to http://www.linuxtopia.org/online_books/office_guides/openoffice_impress_guide/openoffice_impress_Working_with_styles.html), I've changed the type from DEFECT to ENHANCEMENT.
