A new font was already promised to us since at least 3.0 but for various reasons (legal issues, time, ...) it was always postponed. Finally we are on a good way with it. The odd thing about this issue however is that nobody else could reproduce it and thus the root cause could not properly identified... Still, since the symbol for 'prod' and 'sum' currently are located in the private-use are of Unicode in the StarSymbol/OpenSymbol font, there is a good chance that the problem will vanish once the new font is in use and Math can make use of the new code points. That is if you can edit them it will still be MathType that is used to do so. But only on Windows systems with that type of OLE server. Thus especially on non windows systems that formula would be to-view-only.
