Cannot reproduce. After saving and reloading the document with edited dates
those remain as saved.
- Can you reproduce without having to restart the machin?
- How did you exactly enter the dates in the  table (give a step by step
description of what you do)?

2008 ---
Dear Openoffice, I have produced several documents with times listed within
tables in the format HH:MM:SS this data holds until it is saved, the computer
shutdown and restarted at which point the times listed have reset themselves to
00:00:00 with no way of recovering them.  This has only been a noticeable issue
with the current version (3.0) of Openoffice.
