Just adding to this thread a little after the fact.

Another method to keep people from setting focus into read-only fields, 
especially after you've changed the color is to place a box around them 
with the Background Mode (attributes tab) set to transparent.  Make sure 
the box is set to the front (Layout, Bring to Front).

If you don't want to display an extra box, use the etched display 
attribute and make it the same size as the field, placed directly on top.  
You can barely tell it's there if placed correctly.

The users can see the fields, but not able to click into them.

Another alternative is to just delete the old template record from AR 
System Email Templates and create a new record.  Being new, it caches 
immediately.
