Depends on how you 'installed'.

If source package, then...
'make samples'

sip.conf
It's full of comments.

The experts might chime in, but I would say:

/etc/asterisk/asterisk.conf
/etc/asterisk/sip.conf
/etc/asterisk/extensions.conf
/etc/asterisk/codecs.conf
/etc/asterisk/rpt.conf

If using a PCI card
/etc/dahdi/*
