Bacula should be able to handle it.  It's all just a stream to Bacula.

What utilities had this problem?

If you get more specific about the problem, we can explain more about 
how Bacula handles it.

I've had trouble with some utilities being unable to copy files >8GB.

Just like any other file. There is no special case where only the
diffs are saved. If there are changes the entire file will be saved in
any backup level.
