This feature is available in Enterprise version of Bacula. You mentioned projects. Perhaps you could create 1 job per project + 1 job for whatever is the rest? Could that work? I actually do this for my medical imaging data (ConeBeamCT, MR, Ultrasound, LungCT ...) .
