It is very likely not the characters you are using to define the shortcut causing your difficulties assuming you follow the instructions described here http://docs.info.apple.com/article.html?path=Mac/10.6/en/8564.html. Perhaps the only exception being the "..." at the end of the command (but see former URL for hints on this). Do you see the status bar at the bottom of the edit window of the publication with which you are testing this? Unless you have the status bar active, the shortcut does indeed not show up. Use menu command "View -> Show Status Bar" and "View -> Hide Status Bar", respectively, to control the visibility of the status bar at the bottom of edit windows. Unless you checked all these things out I doubt there is a bug in BibDesk. It works fine for me. "Add Field..." But what might confuse you is the fact that the shortcut does show up only once the menu command has become active. Define the shortcut and then open a publication for editing. The shortcut should now be visible.
