Go to the Fields preferences, and choose the BibTeX types and fields button.
Then you can edit the types and fields that are used. These are the basis of
the fields you can choose, and that will be added in the item editor by
default. You can also add fields in the little table in the Fields preferences
and set it as default.
There is a file linked on the wiki with an alternate set of default types and
fields appropriate for biblatex. This should be placed in ~/Library/Application
Support/ and is basically what you edit in the Advanced section of the Fields
preferences.
