Your new thermostat will work ok with only two wires if you use only the R and W terminals providing: 1. it is not and electronic thermostat with a display. 2. it is not a set-back set-up temperature according to time and has a clock in it. As with all thermostats that are not electronic, it will have to be calibrated to be used with the equipment, or the equipment recommended settings for the thermostat operation. I had my natural gas company furnish mine free of charge. Here in Pennsylvania, they even installed them free of charge. I think I bought a cheap one from Independent Living Aids that's easy-to-use. It is tactile, and it clicks every two degrees ;f. If that's all you need, then, why not get a simple thermostat and have a sighty put marks on the dial every 5 degrees or so. This should work unless there are no stops at either end of the dial's travel.
