correct me please if Im wrong.

That seems to be true, but until I unplugged the VGA cable, nothing
changed. The screen went black (no input, complete with the short no
video signal message from the screen) until I reset the gdm. Then it
recognized and used the DVI for output.

It works fine, but I'm not so sure about having both cables connected
at the same time.

NVidia's tech person said that I should only use one cable per
monitor, although having both connected won't hurt anything.

There is a setting that can be used in xorg.conf to tell X what order
to use in scanning for a monitor, but I figured it's just easier to
have one cable plugged in.

The difference in the video itself (DVI vs. VGA) is quite startling -
visibly cleaner and crisper.

Thanks everyone!

If they're both the same output (i.e. not individual outputs, but just
different media options) then I'd say yes. But if they are distinct
outputs (say for a multi-monitor setup) then one may be display #1 and
the other #2. If it's integrated video on your motherboard there may
be options in your BIOS, but if it's an add-on card then maybe consult
the manufacturer's website.

Like Chris said it does have to be the same output, but you will have to
change in the monitor menu or input option whichever you want to use. DVI or
VGA.

cheers

No. I use both cables simultaneously and freely switch my monitor (LG
L204WT) in analog or digital mode when needed by monitor's button.
I find rather useful to connect this monitor to two different machines
when it needed.
