There is a piece of software called "sigfile" that will enable you to do this with almost any mail client. It runs in the background and every 30 seconds (or whatever value you set) it writes a random signature (from a list you provide) to a text file and because almost all mail clients (including Outlook Express) will allow you to specify a text file as your signature this has the effect of randomising your sig.
