open the Services Panel (MMC) and find the instance you want to change. On the properties tab enter the user id that you want the instance to use. The only difference with multi-home is that you have multiple Services, each service can have it's own login user. So you just select the service... "Adobe ColdFusion 8 AS general" for one of our instances, named 'general'.
