Sure, except that you might defeat the purpose of having a loopback address by doing this. Say you've got a scenario where you have two routers connected by three separate connections: /-\ O---O \_/ If you specify the next hop of the loopback to be just *one* of the interfaces on the other router, then the loopback will be inaccessable if that one interface on the other router goes down.
