The estimated time remaining varies because your 'recent' power usage varies between checks. If GSM or wifi start requiring more power than before to maintain connection, for example, or backlight usage varies, etc, then the estimate will change according to recent usage. And still you can't assume consumption will be constant on a sub-second time scale...
