Because many companies will whitelist based on domain and/or return to: address. That, and they need some address to look legitimate enough for people to click on them, assuming they get through the spam filter. I've been seeing quite a few spam lately that are targeted specifically at our company, spoofing domains of other companies in our industry, since they would be considered trusted senders.
