Silverado Taco Casserole

10 Ortega Taco Shells, coarsely broken

1 1/2 pounds ground beef

1 (1.25 ounce) package Ortega Taco Seasoning Mix

1/2 cup water

2 tablespoons dried minced onion

1 (8 ounce) can tomato sauce

2 cups grated Monterey Jack cheese

1 large tomato, cut in wedges

6 stuffed green olives, sliced

Ortega Taco Sauce

In lightly greased 1 1/2 quart casserole, place one-half taco chips. Set 
aside. In 10 inch skillet, brown beef until crumbled. Drain. Add taco 
seasoning mix and water. Simmer, uncovered, 10 minutes. Stir in onion and 
tomato sauce. Spoon meat mixture over taco shells. Sprinkle with 1 1/2 cups 
cheese. Place remaining taco chips over cheese. Sprinkle with remaining 
cheese. Arrange tomato wedges and olives attractively on top. Bake in 
preheated 350 degree oven 15 to 20 minutes, or until hot and bubbly. Serve 
with Ortega Taco Sauce.


Makes 6 servings.

Blueberry Pecan Squares

1/2 cup brown sugar

1/2 cup granulated sugar

2 eggs

3/4 cup corn oil

1 cup all-purpose flour

1 teaspoon baking soda

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup grated zucchini

1 1/2 cups fresh blueberries

3/4 cup coarsely chopped pecans

1/4 cup powdered sugar, sifted

Beat together the brown sugar, granulated sugar, eggs and corn oil. Sift dry 
ingredients. Add to sugar and egg mixture. Stir in zucchini, blueberries and 
pecans. Pour batter into a greased 13 by 9 inch baking pan. Bake at 350 
degrees for 20 to 25 minutes, or until a cake tester inserted in center 
comes out clean. Cool completely on a wire rack. Cut into squares. Dust with 
powdered sugar. Serve with vanilla ice cream, if desired.


Microwave Directions:

Beat together the brown sugar, granulated sugar, eggs and corn oil. Sift dry 
ingredients. Add to sugar and egg mixture. Stir in zucchini, blueberries and 
pecans. Pour batter into a greased 13 by 9 inch microsafe baking dish. 
Microwave on high for 8 to 12 minutes, or until done. Let stand to 
completely cool before cutting into bars. Dust with powdered sugar. Serve 
with vanilla ice cream, if desired.


Makes 20 to 24 squares.

Tangy Tartar Sauce
Makes about 1 cup

1/4 cup sweet pickle relish
1/2 cup mayonnaise
1 tablespoon minced sweet onion
1 tablespoon minced parsley
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon prepared horseradish
1/4 teaspoon salt
1/8 teaspoon paprika

Put all the ingredients in a small bowl and stir until well combined.  Chill
for at least 30 minutes so that the flavors can blend.

Tartar Sauce For Fish

2 Tbsp. sweet or dill relish
2 cups mayonnaise
2 Tbsp. white onion (chopped)
1 tsp. lemon juice

Mix all together and store in a glass jar or bowl.  This will keep for weeks
in the refrigerator.

I had a friend who used to make it by mixing sweet pickle relish with 
mayonnaise.  I have done that, and it's pretty good.

German Chocolate Chip Bread
2 boxes of German Chocolate cake mix
2 small boxes of chocolate instant pudding
1- 12 oz sour cream
10 eggs
1 1/2 cups of oil
1/2 cup of water
12 oz of chocolate chips
1 cup of chopped nuts (if desired)
Instructions:
Mix together all ingredients. Pour into three greased loaf pans. Bake
at 325 degrees for one hour or until done when tested with wooden
pick.
May be frozen, heated in microwave, and keeps well in refrigerator
for several days.

Oven,

2 cups boiling water

2 tbsp of butter,

2/3 cups of milk,,

heat oven to 450. Mix potato lsices, sauce mix, boiling water, and butter in 
to ungreased casserole dish.


2. stir in milk.

3. bake at 450 uncovered for 20 minutes or until potatos are tender and 
lightly browned. Let stand about five minutes.

My nephue was a cook a course that he took in college. He said to mix sweet 
relish with mayonaise That is what I use. Just mix the two things and taste 
it to see when it taists like what you remember .
