[CnD] need apple crisp recipe please

Hi everyone. My mom gave me a bag of apples, and I need to find some recipes
to use them up. If anyone has any good apple crisp recipes out there that
would be great. Any other recipes with apples you want to send would be
appreciated as well too, just no pie recipes please. Thanks.

Brittany,
The crock pot that I  have is a  Regal pot and I  bought it about 3  years 
ago. They tell me that the temperature on high is 300 dg F.

[CnD] Butter Pecan French Toast

Butter Pecan French Toast
a.. 3 Servings
a.. Prep/Total Time: 25 min.
Ingredients
 a.. 1 teaspoon plus 1 tablespoon butter, divided
 b.. 1/2 cup chopped pecans
 c.. 2 eggs
 d.. 1/2 cup refrigerated Southern butter pecan nondairy creamer
 e.. 6 slices French bread (1 inch thick)
 f.. 1/4 cup confectioners' sugar
 g.. 1/4 teaspoon ground cinnamon
 h.. Maple syrup, optional
Directions
 a.. In a small skillet, melt 1 teaspoon butter over medium heat. Add 
pecans; cook and stir for 3 minutes or until toasted.
 b.. In a shallow bowl, whisk eggs and creamer. Dip both sides of each 
slice of bread in egg mixture. In a large skillet, melt remaining butter 
over medium heat. Cook bread for 2-3 minutes on each side or until golden 
brown. Sprinkle with pecans, confectioners' sugar and cinnamon. Serve with 
maple syrup if desired. Yield: 3 servings.

[CnD] microwaved cake came out badly

Hi all,
Several weeks ago, someone posted a recipe for a 5-minute microwave
cake made in a coffee mug. I tried it, and it came out strangely: it
tasted okay, but the texture was somewhat chewy and not at all fluffy;
the recipe said it might rise over the top of the mug (it called for a
large mug) but mine did not seem to rise much at all. My only
deviations from the recipe were putting Pam in the cup to prevent
possible sticking and perhaps using a few too many chocolate chips.
My sister (quite the cook) says I over-mixed the batter. My
grandmother, a great cook as well, says I over-cooked it. While I
realize how hard it is to troubleshoot a recipe without being able to
observe the cooking process and/or final product, does anyone have any
ideas? My sister suggests beating the egg and sugar together, mixing
the rest of the dry ingredients, then putting both together with the
milk and oil. She says this will make the cake more fluffy, which is
what I am hoping for. Oh, it also seemed quite "slimy" on the outside.
Is this too much Pam, or should I cut back on the oil in the recipe?

You can absolutely cook this in your crock pot.  I would give it 5 hours on 
low just to be on the safe side.  You might even want to cook it an 
additional hour with the cover off.

EASIEST EVER BEEF-TIPS AND RICE
2 lbs beef stew meat
2 cans french onion soup
2 cans cream of mushroom soup
2 packages quick rice (microwavable)
Preheat oven to 275 degrees.
In an ovenproof casserole dish, add all ingredients and stir. Salt and 
pepper well.

Bake uncovered for 4 hours.
Pour over rice or noodles and serve.  Enjoy.

Pumpkin Muffins

2 cups Bisquick Baking Mix
1/4 cup sugar
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1 egg
1/2 cup canned pumpkin
1/2 cup milk

Heat oven to 400 degrees. Mix all ingredients; beat vigorously 1/2 minute. Fill 
12 greased medium muffin cups or paper lined muffin cups 2/3 full. Bake 15 
minutes or until golden brown. 

Makes 1 dozen.

I have only used unsweetened apple sauce or prune puree in cake or brownie
mixes.  It is an even substitution.
1/2 cup oil = 1/2 cup oil or prune puree.
I have only used prune puree in brownies which actually gives them a richer
flavor.  I use baby food which had a few other things in it, but it works
just fine.  In fact, I use the whole small jar which may be a half an ounce
or one ounce more than the recipe says for oil and they still come out
really good.
When I was teaching low-fat cooking classes, we made two identical boxes of
brownies, one with unsweetened apple sauce and one with prunes and the
brownies we made with prune puree was our favorite hands down.
