Peanut Butter Pie

Ingredients

1 cup of peanut butter

8 ounces of cream cheese, softened

2/3 cup of sugar

2 Tbsp. vanilla 

8 ounces of Cool Whip

Pie shell Try an Oreo cookie shell

Or a graham cracker pie shell. 

Preparation;

Mix all ingredients together with mixer and fill the pie shell. Refrigerate and 
add cool whip to each piece if desired when serving it. 

I've also been known to put chocolate chips or peanuts on top if desired. 
I'm taking it to a potluck tomorrow at work. 

Delight yourself in the Lord and he shall give you the desires of your heart.

I make this pie quite often. It's so good, that once in a while, I just mix it 
up and put it in individual bowls instead of a pie shell. When it's set, my 
family and I have a yummy dessert waiting on us. lol

Here's a tip, instead of pouring the mixture in the pie shell straight from 
your mixing bowl, use a ladle to scoop it from the bowl to the pie shell. This 
way, I have more control where it is going and can spread it out as I go. The 
first time I tried this, my husband actually said, Honey, you  made a pretty 
pie.

This makes a large container of delicious  hot chocolate mix for those cold 
days or evenings.
I use to make it every winter for our family and company. It also makes a 
good gift to pass out to maybe friends or neighbors,in  small containers, 
with a little zip lock bag of marshmallows attached along with the recipe.

Use a large  air tight container for  storing the mix. Enjoy!

11 to 12 cups of instant dry milk
2  pound  box of Nestles Quick chocolate mix
1 16 oz. jar Coffee Mate
1  1 pound box of powered sugar

mix all together in large  container, blending well. Use air tight lid on 
container for storing.

To make a cup of hot chocolate  use maybe
1 or 2 tablespoons  to a cup of very hot water, or to your taste..Depends on 
size of cup too. Add marshmellows  on top if desired.

[CnD] anyone have any blueberry recipes?

Hi,


I'm looking for some blueberry recipes.
I just bought 2 pints for $3. I have cake mixes here, and the usual baking
basics, flour, baking soda, baking powder, butter or margarine, and even
shortening, both white and brown sugars, I do have corn starch, corn 
syrup,

honey, spices like cinnamon, nutmeg, ginger, cloves, some pudding, Jello,
can't think of anything else right now. Any help of a variety of recipes
would be much appreciated! Thanks in advance.

BLUEBERRY BANANA OAT BREAD

 

INGREDIENTS

 

1-3/4 cups all-purpose flour

1/4 cup quick-cooking oats

2 tablespoons oat bran

1/2 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

2 tablespoons vegetable oil

1 egg

1-1/2 cups mashed bananas

3/4 cup frozen blueberries

 

DIRECTIONS

 

1. Preheat oven to 350 degrees. 

2. Lightly grease a 9x5-inch loaf pan.

3. In a large bowl, stir together flour, oats, oat bran,

sugar, baking powder and salt.

4. In a separate bowl, using an electric mixer, beat oil,

egg and banana until combined. 

5. Pour mixture over dry ingredients and stir just until combined. 

6. Gently fold in frozen blueberries. 

7. Spoon into prepared pan.

8. Bake in preheated oven for 70 to 80 minutes or until

a cake tester inserted in the center comes out clean.

9. Let cool in pan on rack for 10 minutes. 

10. Remove from pan and serve warm.

Blueberry Orange Bread

 

Ingredients:

 

2 tablespoons butter

1/4 cup boiling water

1 tablespoon finely grated orange peel

1/2 cup orange juice

1 egg

1 cup granulated sugar

2 cups all-purpose flour

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1 cup fresh or frozen (thawed) blueberries



Topping:

 

1 teaspoon finely grated orange peel

2 tablespoons orange juice

2 tablespoons honey

 

Preparation:

 

1. Combine butter and boiling water in a small bowl; add 1 tablespoon grated 
orange peel and 1/2 cup orange juice.

2. In a mixing bowl, beat egg and granulated sugar with an electric hand-held 
mixer until light and fluffy. 

3. In a separate bowl, combine the flour, baking powder, soda, and salt; add to 
egg mixture a little at a time, alternating with orange juice mixture, ending 
with flour mixture.

4. Fold in blueberries. 

5. Spoon batter into a greased and floured 9x5x3-inch loaf pan. 

6. Bake at 350 degrees for 50 to 55 minutes, or until a wooden pick or cake 
tester inserted in center comes out clean. 

7. Cool bread in pan 10 minutes; remove to wire rack.

8. Combine 1 teaspoon orange rind, 2 tablespoons orange juice, and 2 
tablespoons 

honey, mixing well. 

9. Spoon over hot bread; let cool.

Blueberry Buckle Coffeecake

 

2 cups all-purpose flour

3/4 cup granulated sugar

1/4 cup shortening

3/4 cup milk

2 1/2 teaspoons baking powder

3/4 teaspoon salt

1 egg

2 cups fresh blueberries (frozen/thawed

blueberries can be used if you don't have fresh)

Crumb topping - recipe follows

Glaze - recipe follows

 

Method

 

1. Heat oven to 375 degrees. 

2. Grease 9-inch round pan or 9-inch square pan.

3. Mix flour, sugar, shortening, milk, baking powder, salt and egg in large 
bowl. 

4. Beat 30 seconds with spoon. 

5. Carefully stir in blueberries.

6. Spread batter in pan. 

7. Sprinkle with crumb topping. 

8. Bake 45 to 50 minutes or until wooden pick inserted in center comes out 
clean. 

9. Drizzle with Glaze and serve warm. 

10. Makes 8 servings.

 

Crumb Topping:

 

1/2 cup granulated sugar

1/3 cup all purpose flour

1/2 teaspoon ground cinnamon

1/4 cup margarine or butter, softened

 

Method

 

1. Mix all ingredients until crumbly. 

2. Sprinkle over batter.

 

Glaze:

 

1/2 cup powdered sugar

1/4 teaspoon vanilla extract

1 to 2 teaspoons milk

 

Method

 

1. Mix all ingredients until smooth. 

2. Drizzle over warm cake.

2 cups fresh or frozen blueberries, thawed

2 tablespoons fresh lemon juice

2 teaspoons grated lemon peel

1 cup flour

2/3 cups sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon ground ginger

1/4 teaspoon salt

1/8 teaspoon nutmeg

1/2 cup milk

1 egg

1/4 cup butter, melted

1 teaspoon vanilla

1/2 cup sugar

1 tablespoon cornstarch

1 cup boiling water

 

Method

 

Combine blueberries, lemon juice and lemon peel in a greased 8-inch square 
baking dish; set aside. Combine next 8 ingredients (flour through nutmeg) in

a bowl. Whisk together milk, egg, melted butter and vanilla until blended. Add 
milk mixture to flour mixture and stir just until combined. Spoon batter

over blueberry mixture, spreading evenly. Combine 1/2 cup sugar and cornstarch, 
sprinkle over batter. Gradually pour boiling water over top, covering evenly.

Bake at 350° for 40 to 45 minutes or until a cake tester inserted in center of 
cake layer comes out clean. Serve warm

1 package reduced fat white cake mix --such as snack well's -- 10. 1 ounce

3/4 cups water

1/2 teaspoons grated lemon rind

1 large egg -- lightly beaten --or 1/4 cups egg substitute

Nonstick cooking spray

1 cup fresh or frozen blueberries -- thawed and drained

Light brown sugar

 

Method

 

1. Preheat oven to 350 degrees. 

2. Combine first 4 ingredients in a bowl, stir well with a whisk.

3. Pour into a 9-inch square baking pan coated with cooking spray, sprinkle 
blueberries and sugar over batter. 

4. Bake at 350 degrees for 30 minutes or until wooden pick inserted in center 

comes out clean. 

5. Cool in pan on a wire rack.

Serve blueberry bars warm for dessert with a big dollop of whipped cream or a 
scoop of vanilla ice cream. Or, serve as a coffee cake with coffee or milk and 
a generous sprinkling of powdered sugar.
Ingredients:
  a.. 2 cups all-purpose flour
  b.. 2 teaspoons baking soda
  c.. 1 cup granulated sugar
  d.. 1/2 teaspoon salt
  e.. 1/2 teaspoon ground cinnamon
  f.. 1/4 teaspoon ground allspice
  g.. 1/4 teaspoon ground nutmeg
  h.. 1 large egg
  i.. 3/4 cup milk
  j.. 5 tablespoons melted butter
  k.. 1 cup fresh blueberries or thawed and well drained frozen blueberries
  l.. confectioners' sugar for dusting, optional
Preparation:
Heat oven to 350°. Grease and flour an 11 x 7-inch baking pan. 
In a mixing bowl, combine the flour, baking soda, sugar, salt, allspice, 
nutmeg, and cloves.

In another bowl, whisk together the egg, milk, and melted butter. Stir the milk 
mixture into the dry ingredients just until moistened. Gently fold in the 
blueberries.

Spread in the prepared baking dish and bake for 25 to 30 minutes, or until the 
bars are lightly browned and a toothpick comes out clean when inserted in the 
center.

Serves 12.

Ingredients:

  e.. 1/4 teaspoon baking soda
  f.. 1 egg, beaten
  g.. 1 2/3 cups milk
  h.. 1/4 cup vegetable oil 
  i.. 1 teaspoon vanilla extract
  j.. 1 teaspoon grated lemon peel
  k.. 1 1/2 cups fresh or frozen blueberries
  l.. 1/2 cup chopped pecans
Preparation:
Grease and flour a 9x5x3-inch loaf pan; set aside. 
In a medium bowl, mix together the flour, sugar, baking powder, salt, and 
baking soda. Make a well in the center and set aside. 

In a large mixing bowl, combine beaten egg, milk, vegetable oil, and vanilla 
extract; add to the well in dry ingredients. Stir just until batter is 
moistened. 

Fold in lemon peel, blueberries, and chopped pecans. Spoon into prepared loaf 
pan. Bake at 350° for 60 to 75 minutes, until a wooden toothpick comes out 
clean when inserted in the center of the loaf. Cool blueberry bread in pan on a 
rack. For best flavor, wrap and store overnight.

  i.. 1/4 teaspoon salt
  j.. 1/3 cup milk
  k.. 1/4 cup chopped pecans, optional
  l.. Topping:
  m.. 1 teaspoon sugar mixed with 1/8 teaspoon ground cinnamon or ground nutmeg
Preparation:
Preheat oven to 375°. In large bowl, cream butter, sugar, and lemon until 
light, about 4 to 5 minutes. Beat in egg and vanilla. Mash 1/4 cup of the 
blueberries and beat into batter. Whisk together flour, baking powder and salt. 
Fold dry ingredients into batter, a little at a time, alternating with milk. 
Fold in remaining 1 cup blueberries and the pecans, if using. Spoon into 8 
paper lined muffin cups.
Sprinkle each muffin with the sugar and spice mixture.
Bake until muffins spring back when lightly touched, about 20 to 25 minutes.

Ingredients:
  a.. 1 cup fresh or frozen thawed blueberries
  b.. 1/4 cup apricot or pineapple preserves
  c.. 1 pint vanilla ice cream or frozen yogurt
  d.. 4 tablespoons chopped peanuts or pecans, optional
Preparation:
In a small bowl, combine blueberries and preserves. In microwave, cook on HIGH 
for about 3 to 4 minutes, stirring twice, until blueberries are softened. Cover 
and refrigerate until ready to assemble. To serve, in each of 4 dessert or 
parfait glasses layer ice cream or frozen yogurt and blueberry sauce. Garnish 
with nuts. 
Serves 4.

-- I have half a crock full of it right now in the fridge  that I made last

I use egg noodles with it, though I guess you could use anything you like.
I've had good luck with egg noodles, so I never changed them to anything
else.

2  pound  box of Nestles Quick chocolate mix
 1 16 oz. jar Coffee Mate
 1  1 pound box of powered sugar

mix all together in large  container, blending well. Use air tight lid on 
container for storing.
To make a cup of hot chocolate  use maybe
1 or 2 tablespoons  to a cup of very hot water, or to your taste..Depends on

size of cup too. Add marshmellows  on top if desired.

I don't know, maybe the coffee mate having sugar  in it?  It gives it a more 
creamy taste perhaps.  All I know is I follow this recipe and it  is always

Well, Kim, I was dumping it straight in to the bowl and making a mess. lol So, 
I tried slowing down and being more careful. Also, I always seem to have more 
filling than will fit in the pie crust and this was a good way of keeping me 
from over filling. It's real good with melted chocolate over top.

I have tried it without the coffee mate and it taste flat.

I usually add other kinds of creamer like Hazel Nut, Vanilla, etc. to 
give it variety.


We drink this in the summer too.
