I HAD TO GIVE THE CHILI A NAME AND SINCE IT WAS WHAT MY MOTHER MADE ALL MY 

LIFE I WANTED TO GIVE CREDIT WHERE IT WAS DUE..

 

YOU WILL NEED...

1 LB LEANEST HAMBURGER MEAT (I BUY AT KROGERS LAURA'S BRAND OF HAMBURGER AS 

IT'S THE LEANEST AND SINCE I AM NOT A FAN MUCH OF RED MEAT I CAN'T STOMACH 

THE FATTIER BRANDS)

 

1 15-OZ HUNTS*PREFERRED BRAND STEWED

TOMATOES

1 SMALL WHITE ONION CHOPPED IN SMALL SIZE PIECES

1 15-OZ CAN *HUNTS TOMATO SAUCE

1 15-OZ CAN *RANCH STYLE BEANS

2 TBS CHILI POWDER*LAWREY'S OF COURSE

1 TSP SALT

 

METHOD...

IN A LARGE POT OR DUTCH OVEN BROWN THE MEAT AND ONION TILL DONE. IF YOU BUY 

THE LEANER CUTS YOU WON'T NEED TO DRAIN ANY EXCESS FAT OFF.

 

THEN ADD ALL REMAINING INGREDIANTS AND STIR TILL BLENDED AND COVER AND 

SIMMER FOR ONE HOUR.

 

THAT'S ALL THE RECIPE. I WAS THE ONLY ONE DONE WAY BEFORE ALL THE OTHER 

CONTESTANTS AND I HAD TO PREPARE IT ON TOP OF A COLEMAN CAMP STOVE WITH 

BUTANE TO HEAT IT..

 

WE ALL WORE THE LAWREY'S APRONS AND BOLO'S IT WAS INSIDE THE BRAILLE 

INSTITUTE CENTER IN LOS ANGELES. THERE WERE REPRESENTIVES AND CONTESTANTS 

FROM ALL THE OTHER CENTERS AROUND THE STATE THAT HAD WON. I HAD A VOLUNTEER 

TO ASSIST ME. I REMEMBER THE LADY NEXT TO ME WAS PUTTING CABBAGE IN HER 

CHILI AND WAS DERN NEAR PROUD OF IT TOO, EVEN IF SHE HAD NEVER WON ANY OF 

THE COOKOFFS. H, WONDER WHY??

 

ANOTHER MAN SAID HE PUT ARMADILLO MEAT IN HIS CHILI YUK!

 

I WAS AFRAID MINE WOULD OVER HEAT OR DRY OUT SINCE IT DIDN'T TAKE AS LONG AS 

EVERYONE ELSES DID..

BUT IT FARED WELL AND I BROUGHT HOME THE PRIZE. YOU SHOULD HAVE SEEN THE 

LOOK ON MY SON'S FACE WHEN I CAME IN WITH THAT MICROWAVE HAHHAHAH

HIS MOUTH WAS ALREADY DROOLING OF THE CHIPS AND CHEESE HE WOULD GET TO MAKE 

FOR HIS SELF AGAIN,LOL

 

NOW WHEN THIS STUFF IS DONE SIMMERING FOR AN HOUR, I SERVE IT IN BOWLS WITH 

CRACKERS AND I EAT MINE WITH A GOOD DOSE OF CATSUP ON TOP. THE REST OF MY 

FAMILY EAT THEIRS WITH CHEESE ON TOP AND ALL OF US CRUSHED THE CRACKERS UP 

ON TOP OF THE CHILI AND DIGGED IN..

NOW SOMETIMES, I MADE CORNBREAD AND CRACKERS BECAUSE SOME DON'T LIKE 

CORNBREAD..YOUR NOT AMERICAN IF YOU DON'T LIKE CORNBREAD!

 

BUT I SOMETIMES MADE A FRETO PIE WITH LEFTOVERS IF THERE WERE ANY AND THAT 

WAS REAL EASY JUST USE THE LEFTOVER CHILI AND PUT IN A PAN TOP WITH FRETOS 

AND CHEESE AND BAKE JUST TILL HOT AND BUBBLY AND THE CHEESE IS MELTED..

[CnD] HOT DOG CHILI SAUCE

HOT DOG CHILI SAUCE

2 lbs ground beef

1 large onion, chopped

4 cloves garlic, peeled and minced

1/2 cup ketchup

1/4 cup barbecue sauce

1 tablespoon hot sauce

2 tablespoons yellow mustard

Sauté beef with onion. When beef begins to brown, add garlic. Turn heat to high 
and

cook one more minute.

Stir in remaining ingredients and reduce heat to low. Simmer 10 minutes and 
remove

from heat.

Line hot dog buns with a steamed or grilled hot dog and top with Chili Sauce 
mixture,

then sprinkle with chopped onions and shredded Monterey Jack or Colby

cheese.  Enjoy.

[CnD] WEST VIRGINIA HOT DOG SAUCE

WEST VIRGINIA HOT DOG SAUCE

3 lbs. hamburger

2 tbsp. paprika

2 1/2 tbsp. chili powder

1 1/2 tbsp. crushed pepper (red)

1 tbsp. salt

1 tbsp. celery seed

1/2 tbsp. garlic powder

1 tbsp. black pepper

1 pt. water

Brown all ingredients (except water) until pink is gone. Add water and cover 
until

water boils, then simmer until most of water is gone.

Note: This is a hot sauce so cut the 1 1/2 tablespoon crushed pepper and 1 
tablespoon

black pepper in half.

Note: What sauce is leftover freeze in ice trays. Pop out and put in baggie. 
When

Needed  use 1 cube per hot dog.  Enjoy.

[CnD] Cooking a Pumpkin

Have any of you ever cooked a pumpkin? We have a medium size pumpkin that my
little boy picked from a pumpkin patch. We're not going to be home tomorrow
night to carve and set it out front, so we're thinking about cooking it.
I've always wanted to make a pumpkin pie totally from scratch. At least once
in my life anyway. Lol. Any recipes?

[CnD] using can openers

Hi all,
I always have trouble with using a can opener, I can't seem to get it right on 
the can but after lots of fiddling, I do. I have a hand can opener and also 
just purchased the can opener from blind mice mart the one that's not suppose 
to have sharp edges.
Anyone got any good tips on using a can opener?

[CnD] Two-can Chili RecipeRE: two chilli recipies wanted

Here is an easy chili recipe. Two cans kidney beans, 2 cans crushed tomatoes, 
two cans tomato sauce.

Instructions

Brown in skillet one pound of ground beef. Drain beans and crushed tomatoes Add 
to crock. Also add sauce and hamburger as well.

Use one envelope of McCormick Chili mix which can be purchased at any grocery 
store. Mix well. Simmer on low in crock for 6 to 8 hours, and you have 
delicious chili. Makes 4 to 6 servings.

Here are 2 more suggestions,
1.  Cook the crust for about 10 minutes at 350 degrees.  Always poke a 
couple of fork holes in it.  Second brush the inside of the crust with a 
little olive oil before filling it.

I always do something I saw in the A&P cookbook published in the late 
1970s. I fill a glass with ice water and
let it sit there and tet cold while I am preparing the ingredients for the 
pie crust.
Then I use this water to add to the crust and keep working with the dough 
until it feels rights.  Somehow, the really cold water makes the crust 
really come out good and crispy.  So whether I am making a crust for a pot 
pie or for a dessert pie, I always use the ice water.

When I do a crust that I'm going to cook without filling, I pierce the
bottom of the crust with a fork several times.  This allows steam to

cooking.  For example, Baked Alaska, pudding pie, fresh strawberry pie.

a prepared top crust somewhere you can buy frozen or in the deli section

your grocery store.  It is well worth the time to make the crust from
scratch.  There's something earthy about rolling out a crust on a floured
board with a rolling pin.
