[CnD] Flourless Chocolate Cake For Passover

2012-11-06 Thread Helen Whitehead
Flourless Chocolate Cake For Passover

2 C semisweet chocolate chips (12 oz)
1/2 C butter plus extra for
coating
1/4 C sugar
1/4 C water
1 teaspoon instant coffee granules
3 eggs
Whipped cream for topping
Preheat the oven to 425 degrees F. Butter the bottom and sides of a 9-
inch pie plate.
Place a 12 inch square sheet of wax paper in the plate and butter the
wax paper.
In a medium-size saucepan, combine the chocolate chips, 1/2 C butter,
sugar, water, and coffee granules. Heat over medium heat for 2 to 3
minutes, until the chocolate and butter are melted, stirring
constantly.
Remove from the heat and stir in the eggs until the mixture is smooth.
Pour into the wax paper-lined pie plate. Bake for 10 minutes; the cake
will not be completely set in the middle. Cool, cover loosely, then
chill for 6 to 8 hours, or overnight.
When ready to serve, remove the cake from the refrigerator and allow to
sit for 10 minutes. Invert the cake onto a large flat serving dish and
remove the wax paper. Top with whipped cream.

Which one do you have? I had one from there that did not have as high of a
temperature range but seemed to be a lot more responsive. I got this one
in
the hopes I could make candy, but the lack of responsiveness makes it
almost

useless even for checking the internal temperature of meats.

I got a talking cooking thermometer from Amazon that has a pretty wide
temperature range, up to at least 500 but the problem I am having is that
it
takes several seconds for it to get to the actual temperature. Can anyone
recommend a talking cooking thermometer that is more responsive?

[CnD] Frosting cakes

2012-11-06 Thread Helen Whitehead
Here's what a friend of mine, Armando had to say about icing cakes.
Try spreading the frosting on the cake the best you can without touching,
then take a piece of wax paper lay it on the frosting, and then use your
hands to feel whether the frosting is even, then just use your hands over
the wax paper, and smooth it out much the way you smooth a blanket or a
sheet on the bed.
Hope this helps.

Here is one tip I had for icing cake, but I have not tried it:
Freeze cake 1 hour for easier frosting without crumbling cake
I also heard to spread a thin layer of icing for the first layer, then it is
