Oh my gosh, Carol!  I just opened the box!  There are two Our Special 
Cookbooks there!  One is copyright 1976 and the other is copyright 1990.
They are in perfect condition as far as I know.  Good thing I have that 
security system on our house, LOL!  I could transcribe the contents and put 
them into our little family of groups.  I will try to do it before the end 
of the year as a Christmas present for all of you and then you guys can let 
me know.  Wow, that would be a big project for me to actually get them into 
my computer.  Shooee!  The first one is about 81 pages and the second aboutg 
112 I think.  It feels really fat compared to the second.  I do not know if 
there are duplicates, I am just overwhelmed and I need to write the 
gentleman and thank him again, now that I found out what was there.  I am 
really honored.  He lost his wife six days after I lost George and I just 
met him because I answered his ad to give away some recipes.  He also sent 
me a box of hand-copied braille recipes, some of which is on thermoform type 
pages that will not wear down.
I have two volumes of the Evelyn Lee Cookbook from the 60s and a 1948 one 
volume book called The Braille Cookbook, and somewhere in this house is a 
little Campbell cookbook and my Cooking Without Looking the first book.  I 
do not know where my son put those.  Erg!  But this one I am going to watch 
like a hawk so it will not go anywhere and try to get some of this stuff 
into my computer!  Whoo-hoo!

[CnD] peanut butter cookies

Dessert PEANUT BUTTER COOKIES

 

1 cup solid shortening 1 cup white sugar

1 cup brown sugar  1 cup smooth peanut butter

2 ½ cups plain flour 2 large eggs

2 tsp. baking soda  pinch of salt

 

Sift flour, soda and salt.  Cream shortening and sugars.  Add peanut butter and 
eggs.  Add flour mixture last.  Drop by spoonfuls onto greased cookie sheet.  
Make criss-cross marks with a fork on each.  Bake at 350 degrees for 10-12 
minutes.  Yields 2 ½ to 3 dozen.

CHRISTMAS BARS 

 

1/2 c. butter

2 squares unsweetened baking chocolate

3/4 c. flour

1 c. sugar

2 eggs

1 tsp. vanilla

 

Method

 

1. Melt chocolate and butter, cool slightly. 

2. Mix sugar and flour, stir in chocolate mixture. 

3. Beat in eggs and vanilla until well combined. 

4. Pour into greased 8 x 8 x 2 inch pan. 

5. Bake at 350 degrees for 20 minutes. 

6. Cool for 15 minutes.

 

MINT CREAM LAYER:

 

1 1/2 c. powdered sugar

3 tbsp. butter

2 tbsp. evaporated milk

3/4 tsp. peppermint flavoring

2 to 3 drops green food coloring

 

Method

 

1. Beat all ingredients together and spread over cooled bottom layer. 

2. Chill until firm, about 1 hour.

 

CHOCOLATE GLAZE:

 

2 tbsp. butter

3 oz. sweetened chocolate

1 tsp. vanilla

 

Method

 

1. Melt chocolate and butter together. 

2. Remove from heat and vanilla. 

3. When cooled, but still liquid, spread over second layer. 

4. Chill 3 hours, then cut into bars.

Spicy Mincemeat Bars

 

1 cup butter or margarine, softened

1/2 cup firmly packed brown sugar

1/2 cup sugar

2 eggs

2-1/4 cups self-rising flour

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cumin

2 cups prepared mincemeat

1 cup chopped pecans

1 cup rolled oats

1 teaspoon vanilla extract

 

Method

 

1. Preheat oven to 350 degrees. 

2. Spray a 15x10-inch jelly-roll pan with non-stick vegetable spray.

3. In a large mixing bowl, cream butter and sugars until light and fluffy. 

4. Add eggs, one at a time, beating well after each addition. 

5. Beat in flour and spices.

6. Stir in mincemeat, pecans, oats, and vanilla until well blended. 

7. Spoon into prepared jelly-roll pan; smooth the top.

8. Bake 25 to 30 minutes or until lightly browned. 

9. Cool in pan on a wire rack.

10. Cut into bars.

11. Makes 4 dozen.

Hi Lora,
I have the book copyrighted 1976. But I've never seen the 1990 book. By the 
time I learned about it, they were all sold. Last week I ordered the latest 
book from National Braille Press. I can't remember the exact name of it but 
will look it up if requested. It's something like favorite recipes from our 
readers. The book costs $9.
I can't wait to see the 1990 book.

1 teaspoon lemon flavoring

1/2 cup milk

1 teaspoon baking soda dissolved in milk

3 1/2 cups all purpose flour sifted

Sift dry ingredients together. Cream shortening, add sugar, add egg and mix

Bake

10 minutes at 400 degrees.

Start to Finish:3 hr 5 min

Makes:About 3 1/2 dozen cookies

1 cup granulated sugar

1 cup powdered sugar

1 cup butter or margarine, softened

3/4 cup vegetable oil

2 tablespoons milk

1 tablespoon vanilla

2 eggs

4 1/4 cups Gold Medal® all-purpose flour

1 teaspoon baking soda

1 teaspoon cream of tartar

1/2 teaspoon salt

1/4 cup granulated sugar

1.  In large bowl, beat 1 cup granulated sugar, the powdered sugar, butter, oil,

milk, vanilla and eggs with electric mixer on medium speed, or mix with

spoon. Stir in remaining ingredients except 1/4 cup granulated sugar. Cover; 
refrigerate

about 2 hours or until firm.

2.  Heat oven to 350°F. Place 1/4 cup granulated sugar in small bowl. Shape 
dough

into 1 1/2-inch balls. Roll balls in sugar. On ungreased cookie sheet,

place balls about 3 inches apart. Flatten to 1/4-inch thickness with bottom of 
glass..

Sprinkle cookies with a little additional sugar.

3.  Bake 13 to 15 minutes or until set and edges just begin to brown. 
Immediately

remove from cookie sheet to cooling rack.

3 Tablespoons milk

stir (may need to add 1/4 cup of flour). Chill 1 hour. Roll thin and sprinkle

Banana Pudding Sugar Cookies 

2/3 cup shortening

2/3 cup granulated sugar

2 eggs

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/2 teaspoon salt

1 small box instant banana pudding

2 1/2 cups all-purpose flour, divided

Cream the shortening and the sugar together until light and fluffy.

Beat in the eggs one at a time. Stir in the vanilla extract, baking

powder and salt. Add the DRY instant banana pudding powder. Mix in 2

cups of the flour; add the remaining 1/2 cup only if needed. Cover

dough and chill for at least 2 hours or overnight.

Preheat oven to 375 degrees F. Grease baking sheets.

Shape dough into walnut size balls and place 2 inches apart on the

prepared baking sheet. Flatten balls and bake for about 8 minutes or

until light golden brown.

Hi. Oh my goodness these cookie bars just kept sounding better and better!
At first I wasn't sure about the bar recipe, but then as the recipe
continued with the mint layer and then the chocolate? Oh, I think I may just
have to try these! It just so happens that we just bought some peppermint
extract the other day. I want to try to make something along the lines of a
Girlscout Thin Mint cookie. Yum!
