I would think the Bar-B-Cups posted here a while back would make good
stupidbowl snacks, as would the bourbon hot dogs and spinach balls I posted
here a while back and also sausage balls. And then of course there's queso
-- two blocks of Velveeta cubed, two cans of Ro-Tel or another tomatoes and
green chilies product, and a mess load of corn chips to dip into it once the
cheese melts.

I sent a recipe for baked Brussels sprouts to the list.  You wash and
prepare the sprouts, cover lightly with olive oil.  Then sprinkle seasoned
bread crumbs on the sprouts.  Bake in a shallow baking pan in a 350 oven for
around twenty minutes.  It depends on the size of the sprouts.  

 

I forgot to mention that you dip them in garlic mayonnaise (aioli).  It
really adds to the flavor.

 

Other tasty snacks can be made with prepared turnover dough.  Pepperidge
Farms makes a good one.  My favorite is mushroom turnovers.  Use an
assortment of mushrooms or just your favorite.  Cut them in small pieces.
Fry in olive oil until they are just soft, about five minutes.  Add salt and
pepper and grated parmesan or Romano cheese.  Add just enough mushrooms to
fill the pastries, fold over.  Bake according to package directions.  These
pastries can be used to prepare many different snacks.  One easy one is to
use your favorite jam.

 

I'm making a pot of chili that will last me the whole weekend.  I don't
really like football, so I'm not having friends over.  I'll watch to see how
the guy with the imaginary dead girlfriend does.  We'll also need to know
how the guy with the banned antler spray does, and . which team will the
mother of the two opposing coaches route for?

So much to discover.

Okay, first the Spinach Balls. The legend for measurements is at the end, as
all such designators are in the blind accessible MealMaster format. After
that are the Bar-B-Cups, some wonderful mushrooms from Dale, and the Bourbon
Hot Dogs recipe. I looked but I don't have a sausage balls recipe in my
files right now -- it may just be waiting for addition to the master file.

Title: Spinach Balls
 Categories: Party snack, Appetizers
   Servings: 1

 20 oz Frozen chopped spinach
  2 c  Herb seasoned stuffing mix
½ c  Parmesan cheese
  2 ts Garlic salt
  1 ts Freshly ground pepper
  1 ½ ts Thyme
¾ c  Butter, melted
  5 ea Eggs, beaten

  Preheat oven to 350°f.
  Cook spinach according to directions on package but omit the salt. Drain
  spinach and pat dry with paper towels. Add next six ingredients. Toss with
  a fork until thoroughly mixed. Add butter or margarine and then beaten
  eggs. Blend again with fork. Form into walnut sized balls. Bake on greased
  cookie sheet 18-20 min.
  Yield: approx 7doz.
  Note: These may be frozen on cookie sheet and then dropped in freezer
  containers. Remove from freezer, bake, and serve.

 1½ lb ground beef
 1½  c bar b q sauce of your choice
  1 cn of biscuits 10 count
  1  c shredded cheese your choice(optional)

Brown ground beef in a skillet and drain the grease. Add the barbecue sauce,
and mix well. Preheat oven to 350°f. In a muffin tin

take the biscuits out of the can and work with your hands, pressing from the
middle and pulling gently. Form a mini pizza shape

and place in the muffin tin. Press in a pie shell form. Add the barbecued
mixture in each shell, about one quarter cup. Bake for

12 minutes. Take out of oven and then add cheese (I get me a thumb and two
finger pinch and put on top of the bar-be-cups by

pressing slightly before releasing) Place back into oven for 3 minutes. Take
out and enjoy.

Servings: 1
  1 pt whole white mushrooms, de-stemmed and washed
  1 pt beef broth
  8 oz cream cheese
  2 tb red pepper flakes
  1 lb bacon


Marinate the mushrooms in beef broth for about an hour to 2 hours. soften
the cream cheese and add in the red pepper flakes. mix

well and set aside.
Cut the bacon strips in half and wrap the bacon around the outside of the
mushroom, holding  it in place with a toothpick. (Push

the toothpick through the mushroom so it comes out the other side and holds
the bacon in place securely) The bacon will overlap

when wrapped so start there with the toothpick and press through. Fill the
mushroom cap with some of the cream cheese mixture.
Add just enough to fill the cap fully but not so much as it is piled up
really high.
Grill these on the indoor grill for about 6 minutes.  You can also broil
them for about 10 minutes or bake at 400 for about 20

minutes.

[CnD] question about brussels sprouts snack

Hi,
Someone mentioned dipping the sprouts in garlic mayonnaise. Would that be after 
they are coated in bread crumbs and baked?

Using fresh or frozen is an interesting question I didn't think of. I don't see 
why frozen sprouts couldn't be thawed then coated and baked. I have to admit 
that I don't know when fresh ones are available.

Caramel Chunk Brownies
1 (22.5 ounce) box brownie mix
1 cup hot caramel ice cream topping, divided
2 cups semi-sweet chocolate chunks, divided
Preheat oven to 350 degrees. Line 9x13 inch baking pan with parchment paper, 
extending paper up sides of pan, set aside. PREPARE brownie batter as 
directed on package. Pour half of batter into prepared pan. Top with half of 
caramel topping and chocolate chunks. Top with remaining brownie batter. 
Drop remaining caramel by rounded teaspoonfuls onto brownie batter. Swirl 
with knife. Top with remaining chocolate chunks. Bake for 35 to 40 minutes, 
or until edges are set. Cool completely in pan. Use edges of parchment to 
lift brownies from pan onto cutting board. Pull back edges of parchment for 
easy cutting. Cut into bars.

Makes 16 servings.

2 sticks butter, softened
4 eggs
1 (21.5 ounce) box Double Fudge Brownie Mix
Preheat oven to 325 degrees. In bowl, beat butter with mixer on medium until 
creamy. Add eggs, one at a time, beating well after each addition. Add 
brownie mix. Beat until smooth. Spread into greased 9x13 inch baking pan. 
Bake for 40 to 50 minutes.

1 stick butter
2 tablespoons water
4 (1 ounce) squares unsweetened chocolate, broken up
2 eggs
1 1/2 teaspoons vanilla
1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
1/4 teaspoon salt
Preheat oven to 350 degrees. In microwave-safe bowl, combine sugar, butter 
and water. Microwave on high for 4 to 5 minutes, or until mixture bubbles, 
stirring once. Add chocolate; stir until melted. Stir in eggs, one at a 
time, until incorporated. Stir in vanilla. Add flour, baking soda and salt; 
stir well. Pour into greased 9x13 inch baking pan. Bake for 15 to 20 
minutes, or until toothpick inserted into center comes out slightly sticky. 
Cool in pan.

1 1/2 sticks butter
4 (1 ounce) squares unsweetened chocolate
4 large eggs
1 cup all-purpose flour
2 cups sugar

Preheat oven to 375 degrees. In saucepan, combine butter and chocolate. Melt 
over very low heat. Cool slightly. Add sugar, mix well. Add eggs, beat with 
wooden spoon. Add flour, mix well. Add chocolate chips. Pour into greased 
and floured 9x13 inch baking pan. Bake for 20 to 25 minutes, or until 
toothpick inserted into center comes out clean. Brownies may appear very 
fudgy, almost uncooked, but they will be done. Let stand for 15 minutes.

1 cup chopped pecans, toasted
Preheat oven to 325 degrees. In large saucepan, combine sugar, butter and 
water. Cook over high heat, stirring constantly, until sugar melts. Add 2 
cups chocolate chips and vanilla. Cook, stirring until smooth. Let cool for 
15 minutes. ADD flour, baking soda and salt to cooled chocolate mixture, 
stirring until blended. Stir in eggs and chopped nuts until blended. Spread 
batter into greased and floured 9x13 inch baking pan. BAKE for 30 minutes. 
Sprinkle remaining 2 cups chocolate chips evenly over warm brownies. Let 
stand for 5 minutes to soften. Spread over top. Cool on wire rack.
Makes 18 brownies.

Yes.  You bake the breaded sprouts, let  them cool.  Then serve and dip.

I found fresh Brussels sprouts in my market.  I live in Southern California.
Elsewhere they may be buried in snow.

Someone mentioned dipping the sprouts in garlic mayonnaise. Would that be
after they are coated in bread crumbs and baked?

Using fresh or frozen is an interesting question I didn't think of. I don't
see why frozen sprouts couldn't be thawed then coated and baked. I have to
admit that I don't know when fresh ones are available.

ANGEL FOOD MACAROONS

1 box angel food cake mix (1 easy step)
1 1/2 teaspoons almond extract
1/2 cup water
2 cups coconut

Put dry cake mix in mixer and add almond extract and water.  Mix on low
speed for 1 minute.  Turn to medium speed for 2 minutes.  Add coconut.
Drop by teaspoon onto parchment paper.  Bake 350 degrees for 10 to 12
minutes.  Let cool on rack and remove cookies.

Cherry Drop Cookies

1 box (2 layer) cherry cake mix
1/4 cup vegetable oil
2 tablespoons water
2 eggs
few drops of red food coloring (if desired)
1 cup chopped walnuts
maraschino cherries

Preheat oven to 350°. Blend cake mix, oil, water, eggs, and food coloring. Stir 
in nuts. Drop from a teaspoon onto an ungreased cookie sheet. Top each cookie 
with 1/2 a maraschino cherry. Bake 10 to 12 minutes. Cool on cookie sheet for 
about 
1 minute. Remove to rack to finish cooling. Yield: 4 to 5 dozen cookies.

Banana Fudge Cookies


1 (18 1/2 ounce) box chocolate cake mix
1/3 cup mashed bananas, ripe
1 egg
2 tablespoons water
6 ounces semisweet chocolate pieces

Combine cake mix, bananas, egg, and water in a bowl. Beat with electric mixer 
at medium speed until smooth. Stir in chocolate pieces. Drop by rounded 
teaspoonsful, about 2 inches apart, on greased baking sheets. Bake in a 350 
degree F oven for 8 minutes or until done. Remove from baking sheets; cool on 
racks.
Makes 3 1/2 dozen.

[CnD] Cake Mix Butter Pecan Cookies

Butter Pecan Cookies

1 box butter pecan cake mix
1 small package vanilla instant pudding mix
1 cup cooking oil
1 egg
1/2 cup finely chopped pecans, or nuts of your choice

Mix all ingredients together. Roll into small balls and place on cookie sheet. 
Bake in 400 degree F oven for ten minutes. (Note: I baked mine at 375 degrees F 
for only 8 minutes, and let them cool on the cookie sheet for about five 
minutes before removing them. They turned out just perfect. They will be kinda 
soft on top when you remove them from the oven, but they will finish cooking 
while they cool.)

Peanut butter cake mix cookies

1 box yellow cake mix
1 cup peanut butter, I use creamy
2 eggs
1/2 cup oil
1 teaspoon vanilla

Mix peanut butter, eggs, vanilla and oil until smooth.  Add in cake mix, mix
well.  Roll into balls, place on ungreased cookie sheets and flatten.  Bake
at 350 for 10 to 12 minutes.  
Note: if you want a soft cookie, don't leave in
longer than 10 minutes.  The cookies won't feel quite done to the touch
until you let them sit for a couple minutes.  Remove and cool.  Store in
airtight containers.  Makes an amazing soft cookie.

1 (18 1/4 ounce) box lemon cake mix
1 egg
4 ounces thawed Cool Whip
1/2 cup confectioners' sugar

Preheat oven to 350 degrees F.

In a large bowl, combine cake mix, egg and cool whip, mixing to combine. Batter 
will be very stiff.

Drop by teaspoonful into confectioners' sugar. Roll into 1-inch balls, using 
sugar to keep dough from sticking to hands. Place balls 2 inches apart onto 
greased baking sheets. Bake for 10 to 12 minutes or until light brown on bottom.

Transfer to a wire rack to cool completely. Store in an airtight container.

Makes approximately 72 cookies.

1 (18.25 ounce) box Duncan Hines Swiss
Chocolate Deluxe cake mix
1/2 cup vegetable oil
2 eggs
1 cup semisweet chocolate chips
Pecan halves, if desired

Preheat oven to 350 degrees F.
Blend cake mix, oil and eggs. Stir in chocolate pieces. Drop from a teaspoon 
onto an ungreased cookie sheet. if desired, Top each cookie with a pecan half. 
Bake for 10 to 12 minutes, until cookie tests done with a wooden pick. Cool on 
cookie sheet for about 1 minute, then remove to rack to finish cooling.

Makes 4 to 5 dozen cookies.

Fudgy Oatmeal Butterscotch Cookies

1 devil's food cake mix
1 1/2 cups quick cooking or old fashioned oats, uncooked
3/4 cup butter, melted
2 large eggs
1 tablespoon oil
1 teaspoon vanilla extract
1 1/4 cups mini-chocolate chips
1 cup butterscotch chips

Preheat oven to 350 degrees F.
In a large bowl combine all ingredients except chocolate and butterscotch 
chips; mix thoroughly. Stir in chips. Drop by heaping teaspoons onto ungreased 
cookie sheet, 2 inches apart.
Bake 10 to 12 minutes. Cool 1 minute on cookie sheet, remove to rack and cool 
completely. Store in airtight container.
Makes 3 dozen cookies

Note: Personally I think these would be better with peanut butter chips instead 
of butterscotch.
