Re: [CnD] Ideas for sandwich spreads

I like to change up ingredients for sandwich spread.
Start with mayo, or cranberry sauce, or salad dressing of your taste.
add 1-1/2 tsp. or more horseradish and 1 tsp. or more mustard.

Steak sauce is also good on a burger. As for other sandwiches, I'm sure
cream cheese would be good with ham or similar meats.

Also do searches for things like dilled mayonnaise or garlic
mayonnaise
for ideas. You can also use other sauces and dressings on sandwiches. My
ex

used Green Goddess on sandwiches, for instance. And you can replace sour
cream with mayonnaise in any dip that uses it. Also experiment with a dab
of

mustard, either yellow or brown, added in to give it a bit more bite.
To test sandwich spreads make up a base batch, then put it in several
small
containers and add different ingredients in very small amounts, mixing
them
up and trying them with shoestring potatoes or vegetable sticks to find
out

how the spread tastes. Make sure you know what you did for each one, of
course, so you can repeat the successes. Also try putting a dab of two
different ones on two sticks, holding them together, and eating them
together to determine what combinations of added ingredients might be good
together.

[CnD] Recipe to share

2014-10-24 Thread Andrea Stone via Cookinginthedark
Hi Everyone, I was thinking some sort of lemon rosemary roasted chicken recipe
sounds delicious. So I started looking around on the internet for recipes. I
found one that I thought sounded great. I plan on trying it at some point.
Anyway, just wanted to share. So here you go.
Rosemary Lemon Roasted Chicken Breasts
SERVES 4  |  ACTIVE TIME 5 Min  |  TOTAL TIME 50 Min
1-2 medium lemons, sliced2 sprigs rosemary2 garlic cloves, quartered1 pound
uncooked boneless skinless chicken breasts1 tablespoon extra virgin olive oil1
teaspoon kosher salt½ teaspoon fresh ground black pepper
Preheat oven to 425°F.  Layer ½ lemon slices and 1 sprig of rosemary on the
bottom of a baking dish.  Scatter ½ of garlic around the pan.
Season both sides of chicken with salt and pepper.  Lay chicken on top of lemon
rosemary bed.  Place remaining lemon slices on top of chicken breasts.  Place
rosemary sprig between the chicken breasts.  Sprinkle with remaining garlic.
Drizzle chicken breasts with olive oil.
Bake for 40-60 minutes until chicken is cooked through (1 pound takes about
40-45 minutes, 5 pounds takes 60 minutes).  Cover with aluminum foil for 5
minutes and let the chicken rest.  Serve and enjoy! Andrea StoneAvon

Re: [CnD] Ideas for sandwich spreads

2014-10-24 Thread Nicole Massey via Cookinginthedark
Eons ago when I was in high school and still sighted the Wendys I worked at
was a test store for some interesting potential menu items, one of which was
a beef stroganoff baked potato. We started using the stroganoff on our
burgers, and it was a nice switch. One of my coworkers also turned me on to
using sour cream on a burger, which also worked.
Honey mustard is great on chicken or turkey. A blend of sour cream, apple
mint jelly, and horseradish works great on grilled tuna steaks on a
sandwich. (I don't know the proportions on this, as someone swiped my box of
cookbooks that had this recipe on a giveaway card from the seafood counter
of a local grocery store).
Remember that mayonnaise was a sauce long before it was a condiment, which
implies that all kinds of sauces, either as they are or thickened a bit, can
work on sandwiches.
