CHICKEN ROCKEFELLER 1 (10 oz.) pkg. frozen chopped spinach, thawed and well drained 1 egg, beaten 1/3 c. sour cream 1/2 tsp. salt 1/2 tsp. ground nutmeg 1/2 tsp. red pepper 1/2 c. Italian-style breadcrumbs 2 tbsp. grated Parmesan cheese 6 chicken breast halves, skinned and boned pepper 3 tbsp. butter, melted Combine first 6 ingredients, stirring well; set aside. Combine breadcrumbs and Parmesan cheese; set aside. Place each chicken breast between 2 sheets of wax paper; flatten to 1/4-inch thickness using a meat mallet or rolling pin. Sprinkle with pepper. Place spinach mixture evenly in center of each chicken breast. Fold long sides of chicken over spinach mixture; fold ends over and secure with a wooden pick. Roll chicken in breadcrumb mixture and place in a lightly greased 12 x 8 x 2-inch baking dish. Sprinkle with remaining breadcrumb mixture and drizzle with butter. Bake at 350°F for 35 to 40 minutes. BC 3-Ingredient Chocolate Cherry Dump Cake Recipe - BettyCrocker.com 2 cans, (21 oz each) cherry pie filling 1 box, Betty Crocker Super Moist devil's food cake mix 3/4cup butter, melted Whipped topping or vanilla ice cream, if desired Steps 1.Heat oven to 350°F. Spray bottom of 13x9-inch (3-quart) glass baking dish with cooking spray. 2. Spread pie filling in baking dish. Top with dry cake mix; gently shake pan to distribute evenly. Pour melted butter over top, tilting pan to cover as much of top with butter as possible. 3. Bake 42 to 45 minutes or until mostly dry on top and bubbly around edges. Cool 10 minutes before serving. Tuna Burger With Avocado Topping 1 can (3 1/2 ounces) tuna 2 tablespoons fine bread crumbs or crushed potato chips 2 teaspoons mayonnaise Salt and pepper to taste Worcestershire sauce to taste 2 teaspoons margarine 1 slice American cheese Avocado Topping (see below) Drain and rinse tuna. Combine tuna, bread crumbs, mayonnaise and seasonings. Form mixture into a patty. Melt margarine in a skillet; brown "burger" on both sides. Top with cheese; melt in toaster oven or under broiler. Serve with Avocado Topping. Avocado Topping 1/4 California avocado 1/2 teaspoon lemon juice Seasoned salt to taste Mash avocado with fork to a chunky texture. Mix in lemon juice and seasoned salt. Caramel Pecan Bars Crust: 1 cup butter 1/2 cup packed brown sugar 3 cups flour 1 egg Filling: 3 cups pecan halves 3/4 cup butter 1/2 cup honey 3/4 cup packed brown sugar 1/4 cup whipping cream To make Crust, combine all ingredients until blended, using electric mixer or food processor. Press evenly into a 15 by 10 by 3/4 inch jelly roll pan. Bake at 350 degrees for 15 minutes. To make Filling, spread pecans evenly over Crust. In large heavy saucepan, melt butter and honey. Add brown sugar. Boil for 5 to 7 minutes, stirring constantly, until its a rich caramel color. Remove from heat. Stir in cream; mix well. Pour over pecans. Bake for 15 minutes longer. Chocolate Chip Surprise Muffins 1 1/2 cups unsifted all-purpose flour 1/2 cup sugar 2 teaspoons baking powder 1/2 teaspoon salt 1 egg, slightly beaten 1/2 cup milk 1/4 cup vegetable oil 1/2 cup miniature semi-sweet chocolate chips 1/4 cup apricot or peach preserves or apple jelly Grease 12 muffin cups (2 3/4 inches in diameter). Combine flour, sugar, baking powder and salt in a bowl. Add egg, milk and oil; stir just until blended. Fill muffin cups one-fourth full. Add 1 teaspoon chocolate chips and 1/2 teaspoon preserves or jelly. Fill muffin cups two-thirds full. Bake at 400 degrees for 25 to 30 minutes. Makes 12 muffins. Enjoy.
