Pamela, here is a recipe I found on another list, using potatoes.
Manhattan Hot Shot Sandwich
Servings: 1


Ingredients:
4 ounces cooked sliced roast beef, roast turkey, roast pork, or roast chicken, 
warmed
1 to 1-1/2 cups hot mashed potatoes
4-6 ounces hot gravy (appropriate for the meat, such as beef gravy on beef)
1 slice soft white or whole wheat bread


Method:
Place bread on plate and cover with mashed potatoes, a little of the gravy, the 
meat, and the rest of the gravy. Serve hot with a side salad or hot vegetable 
to make a meal.

You don't need to collect recipes, you do great on your own.

I bought some stew meat from Trader Joe's Friday. I'm going to put some cream 
of mushroom soup in the bottom of the crock pot, then the meat, then some 
frozen veggies, and then some slices of cheddar cheese. I hope it works out.

That looks like something easy to do with leftover cooked potatoes. If I cook 
too many and don't make hash browns with them, I usually never get around to

tablespoons of butter and diced potatoes, and stir to mix onions and potatoes.

. Cook over medium heat until golden brown, approximately 6 to 7 minutes. 
Flip and cook an additional 6 to 7 minutes until golden brown.

*To Boil Potatoes: Scrub potatoes, cutting out any darkened spots. Cut potatoes 
into quarters. Place potatoes in a large sauce pan filled with enough cold

I wish I had seen the Shepherd's Pie  recipe before I made the decision of what 
to make with my red potatoes. However, since I also had sweet potatoes and ham 
that needed using up, I made a Mashed potato casserole. At first I layered the 
ingredients to make it appealing as you cut through it. Then I discovered that 
my cream of whatever soup wasn't going to work its way down through my layering 
and I should have added it on top of each layer, saving a little for the top. 
What a mess I had. I didn't want to lose the casserole.
What to do? I dumped it all into the biggest stainless steel bowl I own, mixed 
it all up together and refrigerated it until tomorrow morning.
Tomorrow I will fill my crockpot about half way up, put in a layer of American 
cheese, maybe as many as 8 or 10 slices, then put more casserole about an inch 
or slightly more from the top. Then I will add a nice layer of Cheddar cheese

I got this one from Helen and this one is wonderful.

 

Helen's Favorite Shepherd's Pie

 

1 pound ground beef

1 onion, diced

A can of corn, or frozen corn

A can of Franco American beef gravy or a can of Campbell's mushroom soup
Mashed potatoes Salt and pepper to taste.

 

Fry ground beef up with onion.

Peel and cube potatoes, cook, and mash. Add butter to potatoes, I don't
usually add milk to them.

Put ground beef in the bottom of a 9 by 13 pan.

Then, top  with  corn,  add gravy/soup, and top with mashed potatoes. 

I've never tried it with cheese yet.

If you want the potatoes to be crispy on top, don't cover with foil.

Bake for about 30 to 35 minutes, until heated through, at  350degrees.
Enjoy.

3/4 cup reduced-sodium beef broth

Make It

PLACE potatoes and garlic in large saucepan; add enough water to cover.
Bring to boil. Reduce heat to low; simmer 20 min. or until potatoes are tender. 
Drain; return to saucepan. Add sour cream; mash potatoes until smooth. Stir in 
1/4 cup of the cheese.

PREHEAT oven to 375°F. Brown meat in large nonstick skillet. Stir in flour; 
cook 1 min. Add vegetables, broth and ketchup; cook 5 min. Spoon into 8-inch 
square baking dish; cover with potatoes.

BAKE 18 min.; sprinkle with remaining 1/4 cup cheese. Bake an additional 2 min.

[CnD] About the Power Air Fryer Oven

This is not a paid advertisement, just a customer who wouldn't trade his Power 
Air Fryer Oven for any thing else used in the kitchen!!!  Ha ha ha!!!

The Power Air Fryer Oven is 18 inches tall, 12 inches wide and 12 inches deep.
The door is in the front and pulls down from the top.
The inside has different levels to put up to 5 stainless steel wired trays.
The place to put the rotisserie rod is about in the middle.
The inside of the machine has rounded corners for the air to circulate through 
it.
All the air comes in from the top of the unit and circulates all through the 
inside, top to bottom and all around.
At the bottom of the inside is a drip pan that slides in and out for easy 
cleaning.
The controls are all flat screen and are located between the top of the door 
and the top of the machine.
They are very large and lighted up in blue.
When you push the large button at the bottom of the screen all the controls 
light up.
It takes the unit about 60 seconds after you push the button to begin so you 
have enough time to make your settings.
It is preset to come on at 370 degrees and 15 minutes.
On the left side of the screen are up and down buttons for the temperature 
which can easily be marked with bump dots. The temperature is raised or lowered 
5 degrees with each push of the button. It makes a beeping sound so you will 
know if the number is changing.
On the right side are the up and down buttons for the time. It automatically 
comes on at 15 minutes and each push of the button raises or lowers the time by 
1 minute.
Between the temperature and time buttons are about 3 rows of symbols that you 
can push for things that are preset, like French Fries, Leg of Lamb, Fish, 
Shrimp, Chicken, Cake, Rotisserie, Popcorn and Dehydration.
I have a little sight and it is very easy for me to see the numbers.
It would be very easy to mark everything with bump dots.

Have you used other bamboo things??? I'm wondering because I was looking at 
target.com for bamboo cutting boards.?? Many of the reviews I read mentioned 
chipping after a while, or that the surface needed to be oiled regularly.?? It

boards.

Ingredients

Instructions

The perfect accompaniment for any barbecue or picnic.

2 lbs. red potatoes; diced

Potato and Pickle Salad


YIELD: 4 servings

ingredients
1 1/2 pounds small tri-colored potatoes
1/2 cup
mayonnaise
1/4 cup chopped sweet pickles
3 tablespoons
pickle
juice
1 tablespoon yellow mustard
1 1/2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
1/2 medium red onion, thinly sliced
5 hardboiled
eggs,
chopped
2 tablespoons chopped fresh
parsley,
for garnish
Paprika, for
garnish

Directions
Place the potatoes in a large pot and cover with cold water by 1 inch. 
Bring to a boil over medium-high heat. Cook the potatoes until they fall off

fork easily, 20 to 28 minutes;
drain
and set aside. When cool enough to handle, slice the
potatoes
in half.

In a large bowl, mix together the mayonnaise, pickles, pickle juice,
mustard,
salt and pepper to form a dressing. Add the potatoes, the red
onions
and eggs, and gently fold together to coat with
dressing.
Taste, and adjust the seasoning as needed. Garnish with parsley and
paprika.

Braised Red Potatoes with Lemon and Chives

SERVES 4 TO 6

RECIPE DETAILS

Timeline

• 10 minutes to prepare ingredients and bring potatoes to simmer

• 15 minutes to cook potatoes covered

• 15 to 20 minutes to cook potatoes uncovered (mince garlic while this is
happening)

• 5 minutes to brown and finish potatoes

Essential Tools

• 12-inch nonstick skillet with lid (Don’t try this recipe in a conventional
pan; the potatoes will stick.)

Substitutions & Variations

• If you prefer, replace the lemon juice with vinegar and finish the
potatoes with another fresh herb (parsley or cilantro are particularly good
choices).

• Add a pinch of cayenne pepper to the garlic mixture for a bit of heat.

Use small red potatoes measuring about 1½ inches in diameter.

1½ pounds small red potatoes, unpeeled, halved

2 cups water

3 tablespoons unsalted butter

3 garlic cloves, peeled

3 sprigs fresh thyme

¾ teaspoon salt

1 teaspoon lemon juice

¼ teaspoon pepper

2 tablespoons minced fresh chives

1. Arrange potatoes in single layer, cut side down, in 12-inch nonstick
skillet. Add water, butter, garlic, thyme, and salt and bring to simmer over
medium-high heat. Reduce heat to medium, cover, and simmer until potatoes
are just tender, about 15 minutes.

2. Remove lid and use slotted spoon to transfer garlic to cutting board;
discard thyme. Increase heat to medium-high and vigorously simmer, swirling
pan occasionally, until water evaporates and butter starts to sizzle, 15 to
20 minutes. When cool enough to handle, mince garlic to paste. Transfer
paste to bowl and stir in lemon juice and pepper.

3. Continue to cook potatoes, swirling pan frequently, until butter browns
and cut sides of potatoes turn spotty brown, 4 to 6 minutes longer. Off
heat, add chives and garlic mixture and toss to thoroughly coat. Serve
immediately.

BRAISED RED POTATOES WITH DIJON AND TARRAGON

Substitute 2 teaspoons Dijon mustard for lemon juice and 1 tablespoon minced
fresh tarragon for chives.

BRAISED RED POTATOES WITH MISO AND SCALLIONS

Reduce salt to ½ teaspoon. Substitute 1 tablespoon red miso for lemon juice
and 3 scallions, sliced thin, for chives.

Manhattan Hot Shot Sandwich
Servings: 1


Ingredients:
4 ounces cooked sliced roast beef, roast turkey, roast pork, or roast
chicken, warmed
1 to 1-1/2 cups hot mashed potatoes
4-6 ounces hot gravy (appropriate for the meat, such as beef gravy on beef)
1 slice soft white or whole wheat bread


Method:

Have you used other bamboo things??? I'm wondering because I was looking 
at target.com for bamboo cutting boards.?? Many of the reviews I read 
mentioned chipping after a while, or that the surface needed to be oiled 
regularly.?? It kind of put me off, so now I'm back to looking for 
tempered glass cutting boards.

Mom got my sister and I a set of Bamboo implements.?? They're not really 
spoons exactly, but they're not like a spatula, either. There's a long 
thin one with a sort of paddle handle with little slits in it that's 
like a combination scraper and turner.?? The other one is longer with a 
spoon like depression in it.



Both of these are great for stirring or moving things around in a dish 
or skillet.?? The only thing I have to remember is that they can't sit 
around in water, so when I use them I have to wash and put them in the 
drainer immediately.



Oh, and my sister, who does more advanced cooking says they work great 
for deglazing pans when she makes broths and sauces.

I can't second this enough. i also got a few extras, but it was worth 
it. It makes the best food and in less than half the time it takes a 
regular oven. And it does not heat up the kitchen.

I have the 8 QT Power Air Fryer Oven, not the new 360 but the model just before 
it. I love it. Like most inaccessible microwave ovens (or probably most regular 
ovens with touch screens these days), It takes some sighted help to put labels 
on the touch screen, but I have had no problems using it.


The rotisserie feature itself is worth it. I can now make the best rotisserie

When this oven wears out I will probably be replacing it with the 360 
model, but for now, it's still working great.

FYI: nonstick pans are NOT safe for birds, unless you use them at a low

Should I be getting emails from this group? I have been signed up for 3 days
and the only thing I've gotten was 1 email from Helen.
Am I supposed to do something that I am not doing? Or, am I doing something
that I shouldn't do?
