[CnD] Looking for authentic Backlava recipe

2010-11-26 Thread J Espinal
Hi everyone,
I am looking for the above mentioned recipe. I know I spelled it
wrong. If it helps anyone that is confused, that is a Greek dessert of
nothing but sugar...pretty much. I would prefer a tried and true
authentic recipe, no short cuts. Thanks!

Re: [CnD] healthy

2010-11-14 Thread J Espinal
Hi Nancy,
That's wonderful you are wanting to be healthy and are concerned about
everyone else's health. I think it is pretty safe to say that most of
us, if not all, know that butter can replace margarine and such.
You can make the same arguement for some fruits and vegetables some of
us can't have a lot of for health reasons. Not only that, but for
stevia versus sugar, wheat flour versus white, and so on and so forth.
We post recipes here to share, enjoy, and to promote the independence
of the blind being good and confident cooks. I think I am safe in
saying that when one posts a recipe, the contents in said recipe are
to be used in descression to each individual's health and well being.
I am sorry if I offended anyone by posting this response. Thanks again
Nancy for your concern, and it is taken in friendship by me and others
as well.

Re: [CnD] decorating cookies

2010-11-06 Thread J Espinal
I agree with Donald. If the cookie is big or in different shapes, I do
ithe decorating in sections. I let one section harden before I color
another. It takes a bit of time, but it's worth all the work when
sighted people compliment you on how cute or cool the cookies look.

[CnD] Looking for unusual recipe: Pancakes made in the oven

2010-11-03 Thread J Espinal
Hi all,
I know that is unusual since pancakes are traditionally made in
skillets and pans. However, because of health concerns, I want to
stick to healthy stuff, and make it as fun as possible. Now with that
in mind, does anyone have a recipe that they have tried before that
calls for baking the pancakes? I would really appreciate it! Thanks!

It's not common in our culture to do that if you can avoid it. Any

[CnD] Suggestion for cutting parchment or wax paper

2010-10-26 Thread J Espinal
Hi all,
This is what I do. I get the end of the paper, and put that on the
sheet while still on the roller. I put something on top of that end so
itwill stay put. Then, I roll out the paper until I get to the other
edge of the sheet or pan...whatever I'm using. Then, I put something
on top of that and put a stopper on the other side of the roll...on
the outside of it. Then I cut along the edge of the sheet. It doesn't
have to be perfect...it's just important to cover the spots you'll be
using. Hey, the kitchen is full of those little quote unquote stoppers
and things to put on top of things so they'll stay put...why not use
them, right? LOL!
This might be an idea, but is there a place where one could go and get
an already measured roll of wax or parchment paper? So, all one has to
do is roll it out, and it just comes off...or at least have an edge to
cut. I don't know...just an idea.

I do it the same way that CC does, but sometimes I use different
