Re: [CnD] Curried chicken

2019-01-23 Thread Sheila Rieger via Cookinginthedark

Hi,
Thanks for this.
I made a stupid mistake in my recipe request recently.
I put curried chicken in the title, but forgot to put the word
curried in the message. I was meaning to ask if anyone had a good
recipe for curried chicken, stove top and not hot, hot curry.

Any more suggestions?
I don't know whether a curried sauce is usually milk based or tomato based.
Many thanks
Sheila,
Vancouver, Canada.

Here's one we used to do; we didn't really have a name for it.

We'd use whatever we wanted for the chicken and have it in
bite-sized pieces. We'd put a little lemon juice in the bottom of a
casserole dish, then put some peppers and onions; then we'd put the
chicken--either whole pieces or bite-sized--your preference. Then
we'd mix either cream of mushroom soup over top or mix broth and a
little curry together and we'd put that over another layer of onion,
peppers, and a little lemon juice. Then we'd put the broth on
top. It was sort of thrown together but we usually did something
different each time; whatever I had, I used.

I had originally gotten the idea from a Scarsdale diet book but
after we stopped doing the diet--which had only called for the
onions/peppers/lemon juice, we kept changing it.

Hello,
Does anyone have a Tried and True recipe for a mild chicken recipe to
serve four persons.
I do not have a slow cooker, so would prefer stove top.
Many thanks.

Vancouver, Canada.

Re: [CnD] Cooking in the dark on the 2nd generation victor stream

2017-12-30 Thread Sheila Rieger via Cookinginthedark

Hello List,
I have the Echo Dot from Amazon and found Dale's show by saying:
Alexa. Play podcast Cooking in the Dark.
It works, and this is the first time I have heard it. It was the
show on making fudge.

Happy New Year to all.

Vancouver, Canada.

I was recently able to subscribe to "Cooking in the dark" as a

I went to the search feature for podcasts and typed in
cookinginthedark with no spaces. And I was able to subscribe.
I had tried many times before to get the podcast on the Victor, but
finally this search worked.
You can also get the podcast on the Echo by saying, wake word "Play
cooking in the dark on Tune-in"."

Re: [CnD] Cooking Pork Sausage Links

2016-02-22 Thread Sheila Rieger via Cookinginthedark

Hello,
I cook sausage links in my counter oven like this:
Lay each sausage in the grill pan and prick each with a sharp knife.
Bake at 350 for 30 minutes.

This wworks for me.
P.S. I use the thin sausages, not the fat ones.

Re: [CnD] Spanish Rice

2015-11-23 Thread Sheila Rieger via Cookinginthedark

Hello Cooks,
Has anyone ever tried making Spanish rice in a
rice cooker. I just have a sinple one but don't want to ruin it.
Could one use canned stewed tomatoes or tomato
soup, and if so, what would be the
proportions. I use both brown rice or white rice.
Many thanks,

SPANISH RICE

1/4-1/2 cup vegetable oil
1-2 cup long grain rice
1/4-1/2 teaspoon salt
1-2 tomatoes, diced
1/2-1 small onion, diced
3-6 cloves garlic, minced
1-2 teaspoons cumin
2-4 tablespoons tomato paste
2-4 cup water, boiled

In a medium saucepan, over medium heat, fry rice in oil until slightly
golden, about 3-5 minutes.
Add salt, cumin, onion and garlic and sauté 1 minute. Add tomato, tomato
paste and boiling water. This should boil almost immediately; turn down heat
to low, cover and cook for about 20 mins, or until water has evaporated.

Serve.

Re: [CnD] trick to pouring liquids

2015-06-24 Thread Sheila Rieger via Cookinginthedark

Hello Gary,
I never pour liquids, but I scoop them instead.
In the case of oil, or any other liquid, I pour some into a wide
mouth container, such as a plastic pot with a snap on llid, and
then scoop out the amount required, such as a tablespoon, quarter
cup measure, or whatever you require.
I do the same with anything liquid, such as ketchup, etc storing the
plastic pot in the fridge, and then there is no chance of over
pouring a liquid which makes no sound at all before you have far too much.
Even the milk is decanted into a wide mouth milk jug, which is then
cover with a plastic shower cap and I scoop out the amount I need
ffor tea or coffee.

Hope you find this helpful.
Sheila,
Vancouver, B.C.
Canada.
