MOM'S WEST TEXAS CHILI FROM TRISH!

I HAD TO GIVE THE CHILI A NAME AND SINCE IT WAS WHAT MY MOTHER MADE ALL MY 

LIFE I WANTED TO GIVE CREDIT WHERE IT WAS DUE..

 

YOU WILL NEED...

1 LB LEANEST HAMBURGER MEAT (I BUY AT KROGERS LAURA'S BRAND OF HAMBURGER AS 

IT'S THE LEANEST AND SINCE I AM NOT A FAN MUCH OF RED MEAT I CAN'T STOMACH 

THE FATTIER BRANDS)

 

1 15-OZ HUNTS*PREFERRED BRAND STEWED

TOMATOES

1 SMALL WHITE ONION CHOPPED IN SMALL SIZE PIECES

1 15-OZ CAN *HUNTS TOMATO SAUCE

1 15-OZ CAN *RANCH STYLE BEANS

2 TBS CHILI POWDER*LAWREY'S OF COURSE

1 TSP SALT

 

METHOD...

IN A LARGE POT OR DUTCH OVEN BROWN THE MEAT AND ONION TILL DONE. IF YOU BUY 

THE LEANER CUTS YOU WON'T NEED TO DRAIN ANY EXCESS FAT OFF.

 

THEN ADD ALL REMAINING INGREDIANTS AND STIR TILL BLENDED AND COVER AND 

SIMMER FOR ONE HOUR.

 

THAT'S ALL THE RECIPE. I WAS THE ONLY ONE DONE WAY BEFORE ALL THE OTHER 

CONTESTANTS AND I HAD TO PREPARE IT ON TOP OF A COLEMAN CAMP STOVE WITH 

BUTANE TO HEAT IT..

 

WE ALL WORE THE LAWREY'S APRONS AND BOLO'S IT WAS INSIDE THE BRAILLE 

INSTITUTE CENTER IN LOS ANGELES. THERE WERE REPRESENTIVES AND CONTESTANTS 

FROM ALL THE OTHER CENTERS AROUND THE STATE THAT HAD WON. I HAD A VOLUNTEER 

TO ASSIST ME. I REMEMBER THE LADY NEXT TO ME WAS PUTTING CABBAGE IN HER 

CHILI AND WAS DERN NEAR PROUD OF IT TOO, EVEN IF SHE HAD NEVER WON ANY OF 

THE COOKOFFS. HMMMM, WONDER WHY??

 

ANOTHER MAN SAID HE PUT ARMADILLO MEAT IN HIS CHILI YUK!

 

I WAS AFRAID MINE WOULD OVER HEAT OR DRY OUT SINCE IT DIDN'T TAKE AS LONG AS 

EVERYONE ELSES DID..

BUT IT FARED WELL AND I BROUGHT HOME THE PRIZE. YOU SHOULD HAVE SEEN THE 

LOOK ON MY SON'S FACE WHEN I CAME IN WITH THAT MICROWAVE HAHHAHAH

HIS MOUTH WAS ALREADY DROOLING OF THE CHIPS AND CHEESE HE WOULD GET TO MAKE 

FOR HIS SELF AGAIN,LOL

 

NOW WHEN THIS STUFF IS DONE SIMMERING FOR AN HOUR, I SERVE IT IN BOWLS WITH 

CRACKERS AND I EAT MINE WITH A GOOD DOSE OF CATSUP ON TOP. THE REST OF MY 

FAMILY EAT THEIRS WITH CHEESE ON TOP AND ALL OF US CRUSHED THE CRACKERS UP 

ON TOP OF THE CHILI AND DIGGED IN..

NOW SOMETIMES, I MADE CORNBREAD AND CRACKERS BECAUSE SOME DON'T LIKE 

CORNBREAD..YOUR NOT AMERICAN IF YOU DON'T LIKE CORNBREAD!

 

BUT I SOMETIMES MADE A FRETO PIE WITH LEFTOVERS IF THERE WERE ANY AND THAT 

WAS REAL EASY JUST USE THE LEFTOVER CHILI AND PUT IN A PAN TOP WITH FRETOS 

AND CHEESE AND BAKE JUST TILL HOT AND BUBBLY AND THE CHEESE IS MELTED..
