For a list of the encoders supported, that's also in the man page. It says in the first paragraph: Jack works with several encoders, namely oggenc, flac, lame, gogo, bladeenc, l3enc, mp3enc and xing. As far as I know, the only ones on that list included in debian are flac and oggenc. I am unaware of any way to make jack tell you which encoders it thinks it can find the binaries for.
