I use an ssh tunnel to send mail, and as I want to make the tunnel as user, I use localhost:8025 as smtp address. It work fine since ages. And I tried to open localhost:25, and nothing happens on that port, it correctly use the 8025 port. Are you sure you've configured the right account? Remember if you have multiple “from” accounts that you can configure an smtp server for each one, so double check that please. I originally wanted to rant about the missing "hint" how to use the address:port syntax in the mailserver setup window. Thus I searched for existing bug reports against evolution and stumbled upon #432584, reported by Robert Kroiss on 10 Jul 2007, which describes a similar problem. However, he found out that the port given in the address line is simply ignored as long as the standard port is available. I have to admit I have blindly taken this for true and added a rant about this to my initial rant about the missing tooltip.
