Nothing indicate that it represent a man, FusionDirectory is entirely
theme-able apart from those two icons, by default FusionDirectory use
the Tango icons but the tango icons pack doesn't
have an icon to represent users.

The other icons you mention are semantic icons and can not bu used as a
replacement
