ffmpeg in general does not support users who build with X but run
with Y < X. mpv checks for that and aborts if that is not the case.
Reassigning back to ffmpeg. Please do not reassign it again.

It is mpv's own code which does the library version check and aborts
here, see check_library_versions() in common/av_log.c.

There used to be a Debian patch to prevent that, but it was removed
rather than rebased in 0.33.1-1[1].

Right, you don't have the upgraded libav* libraries installed. In fact,
mpv does not have tight enough dependencies on them. Reassigning to
ffmpeg to bump symbols versions in the next upload.
