I don't know the exact way, but you can do it with some debian/rules magic.
What's the issue with patching the non-affected arches?

Any way to apply patch on some archs only?

Hi
I d like to know if it is posdible to apply a patch on some archs only.
I have some FTBS on some archs for a package. I have a patch but I d like
to apply it only on failings archs and keep original upstream code for
others.

Patches can indeed fix an issue but be less performant/optimal...

I could not find a way to do so, but i am sure some others already faced
the case before me and can drive me to the doc i did not find :-)

The Debian project doesn't commit to specific release dates ahead of
time. Rather, we have a set of things that need to be done before the
release. We are currently in feature freeze for Jessie.

At the page for information on the Jessie release, you can see:

People often ask if there is a single release "progress meter".
Unfortunately there isn't one, but we can refer you to several
places that describe things needed to be dealt with for the release

Jessie won't be released until all of the RC bugs have been fixed.

Well, when reporting a bug, the user always receives a mail from
the BTS. This mail could also be used as a confirmation message
for this and future bug reports: if the user replies, he will
automatically be subscribed to all bugs "he" reports. The next
bug reports may be forged, but the user would have done the
confirmation step, so couldn't complain. Or better, the reply
to the confirmation message could contain a private key that
could be used by reportbug to insert a X- header identifying
the author of the next bug reports.
