lo credevo anch'io, ma a me debian ha creato un utente con uid 500. non
ricordo come ho fatto, ma credo un banale useradd o adduser che sia,
perchè altri tool non ne conosco.

debserver:~# useradd -u 345 prova
debserver:~# id prova
uid=345(prova) gid=100(users) groups=100(users)

Quell'userid compare solo quando estrai un determinato pacchetto
oppure anche nella creazione di file o altri comandi?
Quale comando dai per estrarre il file? In quali comandi ti sorge il
problema? Se fai un touch nomefile succede anche li'?
Se fai un
set | grep UID
che cosa viene fuori?
