What you see in the title bar there is quite literally what is set as the title for that PDF in the document metadata: $ pdfinfo einf_dab.pdf [...] Keywords: Datenbanken, Einf[Please insert PrerenderUnicode{ü} into preamble]hrung, Motivation The producer of this pdf (pdfeTeX-1.21a by the looks of it) needs to be configured to correctly handle non-ASCII characters in the PDF metadata. If you had the latex source available, you'd be able to fix this by regenerating the PDF...
