You could try mirroring you're evolution directory to the laptop (I
think rsync can do this, don't know about others).
There probably should be a way to mirror two ways (i.e keep in sync two
directories, like Microsoft shared folder).
I would actually want to know of such software if it exists.

AFAIK no, but you can set up dummy accounts by choosing server type:
none for receiving mail. It won't show up in the folder list, so it
doesn't clutter up if you have a lot of id's.
