Me too. I think they're arbitrary, but I used the /etc/apt/preferences
example provided in that link and it just works:

Explanation: see http://www.argon.org/~roderick/apt-pinning.html
Package: *
Pin: release o=Debian,a=testing
Pin-Priority: 900

Package: *
Pin: release o=Debian,a=unstable
Pin-Priority: 300

Package: *
Pin: release o=Debian

I can now do this (as one line):

apt-get update  apt-get -u dist-upgrade 
apt-get -t unstable install mozilla-thunderbird mozilla-firefox gaim

Just today I saw Firefox 1.0 coming into sarge. (But I haven't tested
it yet.)

I think somewhere in the debian manual there is an explanation for 
apt-pinning (wich maybe lack these examples)(...

Anyway, maybe you could provide your example? I actually would like to 
have firefox pinned to unstable...

The Thunderbird maintainer has unofficial preview packages of 0.9-4

And, as far as I am concerned, it could already be updated to unstable. I
was using 0.9-3 for a while and just upgraded to 0.9-4 and everything seems
fine.

A newer Firefox will probably hit testing today. I don't know about
Thunderbird, as it seems version 0.9-2 has not yet been uploaded to
unstable.

BTW, you can learn about packages entering testing at
http://bjorn.haxx.se/debian/. I visit it every day to know the status of
testing (which is the distribution I use).
