Yes, you can. Even if Debian Installer can't setup RAID1 with missing drive you can switch to secondary console and create it manually. Or you can create any partition using gparted and change partition type using fdisk. Try to put [gammu] port = BLUETOOTH ADDRESS OF PHONE connection = blueobex model = E71 to your ~/.gammurc if you are using bluetooth. But phone and computer should be paired before. As I know, Debian live USB is using empty password by default.
