I also experience this buggy behavior on a fresh install of Ubuntu 18.04, using the default Gnome Shell desktop. This bug has been around for at least 7 years (see https://bugs.launchpad.net/ubuntu/+source /unity-2d/+bug/830348). Public bug reported: Gedit takes several seconds to save a simple text file. I would expect the save to be executed almost instantaneously, since it's a process that requires next to no computational work, and disk writes of a few kB shouldn't take more than a few milliseconds.
