So we do this ootb on a pristine install -- in g-t I was setting "Keep title" instead of append, which would mean I set it to not show anything in there but Terminal. This works just fine for me with bash too, with the default profile, no less. Not sure why it hates you. But pretty please, don't change gnome-terminal to do things it shouldn't. I'm not sure gnome-terminal needs any changes for this.
