You can disable the feature by disabling the automatic contacts plugin in the plugins list (Edit->Plugins). I can reproduce this bug with version 2.12.0-0ubuntu5 of Evolution (that came with Gutsy). I am also running on a 64bit platform. As soon as I click the "Reply" button the person gets added into my Contacts list. The plugin is enabled but by default the check box under preferences is unchecked but yet the plug-in still works. Technically if the box in the preferences is unchecked it should disable that functionality without having to disable the plug-in completely. I've also tried toggling it on and off and even restarting Evolution. For verification I created a new user and added an IMAP account. The addressbook was empty. When replying to an e-mail, the addressbook is filled with a new contact. I can try to deinstall and reinstall evolution and see if that helps.
