It looks like the keyboard options for move-to-workspace-left/right were
hidden in Gnome 3.28 onward.

Given that GNOME has used a vertical workspace layout ever since 3.0,
allowing users to assign keyboard shortcuts for horizontal workspace
navigation isn't useful at all, as rightfully pointed out by Bastien

BUT, the internal settings still exist. You can get to them with the
'gsettings' command and:

org.gnome.desktop.wm.keybindings move-to-workspace-right

org.gnome.desktop.wm.keybindings move-to-workspace-left

Considering the fix of bug #1762952, Alt+Shift shouldn't be set
automatically in connection with a 20.04 -> 20.10 upgrade. Any chance
you can elaborate on which steps you took?
