I know this is old, but there is still no setting for this in Evolution. It has been requested in the upstream report that this be made the default, but no action has been taken. The justification of difficulty in differentiation between subject and sender is suspect at best - alternate messages are highlighted, and the default monospace font is much more of a readability problem. according to the upstream bug that seems to be fixed now: /apps/evolution/mail/display/vertical_view_fonts key (true/false) True - same fonts false - current behavior. Fixed in trunk/will be there in 2.21.91. I get the same thing with xubuntu 8.04/evolution 2.22.0ubuntu2.
